Carrots are further evaluated for colour, and we pass over any that have green or yellow tips because only red (orange) colour tips indicate that the flavour is at its peak.
Our carrots are sorted for diameter and length, which provides us with smaller carrots that will be tender, sweet and will cook evenly. Only the tip end, the best part of the carrot, is diced.
